2024 Passe-Tout-Grain

Chill out this summer with our first-ever still wine from CARBONISTE. The Passe-Tout-Grains (pronounced in French as “Pahs Too Graan”) is a chillable red wine that merges tradition with modern flair. This exceptional blend, composed of 73% Pinot noir and 27% Gamay, embodies the essence of Burgundy with a vibrant twist of California sunshine.

The Pinot noir offers violets and wild roses, while the Gamay weaves ripe blackberries, plums, and black cherry into the complexity and depth of this wine.


Vineyards
The Pinot noir hails from Deer Park Ranch Vineyard in Corralitos, nestled within the cool, fog-kissed Santa Cruz Mountains. This vineyard, renowned for its exceptional terroir, imparts a unique character to the wine, thanks to the coastal breeze and mineral-rich soils. Meanwhile, the Gamay comes from the Nights in White Satin Vineyards in Napa Carneros, California, a region celebrated for its unique blend of sun-drenched days and cool, crisp nights. This first pick from the vineyard captures the essence of Napa Carneros' vibrant, fruit-forward profile.


Winemaking (Traditional + Modern)

In creating the Passe-tout-Grains, each varietal underwent whole cluster carbonic maceration separately, followed by 8 months of traditional fermentation in barrel. The two wines were then blended and bottled to create this harmonious light-bodied, fruitful, chillable red wine.

What sets Passe-tout-Grains apart is its unique chillable nature. Enjoy this wine lightly chilled on a warm summer evening or served at cellar temperature with your favorite meal.
