Domaine Paul Pillot Bourgogne Aligoté

Domaine Paul Pillot Bourgogne Aligoté

Regular price $38.00

This wine is made from 100% Aligoté, Burgundy's other white grape. Aligoté expresses fresher orchard fruit notes, like yellow peach and nectarine, than its big brother Chardonnay. Although unable to reach the depth and complexity that certain Chardonnay can, Aligoté is still enjoyed at the local bistro or the Michelin star restaurant all the same. This bottling from Paul Pillot shows all the great mouthwatering freshness Aligoté has to offer, but with a profound expression of lemon zest and honeysuckle. As for the DNA of this wine, 40% of the grapes are sourced from Chassagne-Montrachet, with the other 60% coming from a very rocky area in Remigny, and the juice is aged in large used barrels. Its terroir and élevage really bring out a smooth minerality to underscore such mouthwatering fruit. Pillot's Aligoté is a great choice to pair with grilled lobster, or with a charcuterie of Rossette de Lyon or Saucisson Sec, and Époisses or Délice de Bourgogne.

Details

From our Importer: “Domaine Paul Pillot, today one of the finest addresses in the Côte de Beaune, has been directed since 2004 by the young and dynamic Thierry Pillot. Characterful, elegantly textural and mouthwateringly incisive, these are superb white Burgundies…readers shouldn’t hesitate to buy whatever bottles they can find.”

-William Kelley, Wine Advocate

Domaine Paul Pillot was founded in 1900 by Jean-Baptiste Pillot, a barrel maker by trade, who decided to focus full-time on his vines. His sons, Alphonse and Henri, succeeded him after the conclusion of World War I, increasing the Domaine’s holdings significantly and beginning to bottle their own wines. Henri’s son Paul then took over the Domaine in 1968, acquiring more prestigious vineyards across Chassagne-Montrachet and Saint-Aubin. Today, the domaine owns 13 hectares of vines (4.5 in red) and is run by Paul’s son Thierry who began working in 1999, before taking over full time in 2004. Thierry is the 4th generation to take on the reins of this storied property and is one Burgundy’s brightest stars. Under Thierry the focus has been put squarely in the vineyards, with a discreet use of new wood and a non-interventionist approach in the cellar. The result is wines of extraordinary finesse and palate staining purity that perfectly reflect the finest terroirs of Chassagne-Montrachet and Saint-Aubin.
