Palazzo Tronconi 'Fregellae' Bianco Lazio, 2018
This wine is made of 30% Maturano, 30% Capolongo, and 40% Pampanaro, three autochthonous grapes from Lazio. Autochthonous, or endemic grapes are varietals that are native to a specific region and have adapted themselves specifically to that region's soil and geography. The juice is aged for 12 months in concrete, seeing skin contact for the first three weeks. As such it is an orange wine. The wine is fuller bodied, with intense fruity aromatics and flavors of dried apricot, preserved lemon, and ginger. We would pair it with un panino, with prosciutto, heirloom tomatoes, fresh mozzarella, and basil. Fregellae, was the most important Roman colony in southern Lazio. The farm is all biodynamic, and the wines are fermented with native yeasts with no stabilizing, no clarification or filtration.
